This is a discussion on What bike to get for a build. Helpp within the General forums, part of the Caferacer.net Forums category; heres a pic...
That's a lot better than I expected it to be. It has some weird bar risers on it, the seat doesn't look that comfortable, and it's missing it's rear blinkers (and yes you need those) but it's not bad. If it runs and you can ride it, check the dates on the tires to make sure they aren't older than 5 years and dry cracked.
If you have never had a carb'ed motorcycle, know that these older ones are finicky on startup if they have been sitting.
Ever tried. Ever failed. No matter. Try Again. Fail again. Fail better.

First off, where are you located? It is a lot easier for us to provide suggestions if we know where youare, since lots of us then use that as an excuse to look at some local craigslist ads and make suggestions on specific bikes. I still stick with my suggestion of an SV650. The only downside is that it would be harder to fit in your Vanagon than a smaller lighter bike. That KZ is an OK bike from the looks of it, but It (along with all of the other 4 stroke twins of that era) is not very interesting or exciting. But it looks to be a fairly blank canvas to start from.
