It depends on what you want out of it when you are done asto how hard it will be. An engine rebuild on the DOHC 750 is pretty straight forward. Pull the engine, tear it down and replace all the worn parts. At a minimum you are looking at a camchain, rings and a valve job. At worst you are looking at a crank, rods, pistons, bearings, etc. Either way, parts are available and the job is pretty straight forward. I would plan on putting in all new crank and rod bearings while you are in there. If you know enough to ask the right questions, then you should be able to do it.
There are plenty of guys here that have or have had the DOHC Hondas apart that can help you out.
