What types of fairings are you talking about?
The 1/2 to full fairings have always been uncommon, generally because of the cost and additional bracketry required.

Those 1/4 emgo fairings were always a bit of a fringe style, though more common because of affordability.

I don't know what the pipeburn/dotheton fashion bike people are up to... maybe they decided they weren't cool?

I think it is budget concerns, glass and paint can cost quite a bit. This increases if you cant prep and paint the glass yourself. Many of the bikes i have seen are low budget.

Been seeing less bikes with cafe fairings. I always thought they were one of the main parts.
Is there any reason for this?
Ben
Too many builders and not enough riders.
The fairing is vital if you plan to ride far or fast, but to appreciate a good fairing you need to ride the motorcycle lots and not just park it or strip parts off to sell what's left. You see more naked bobber choppers and fewer real race prepared bikes, because you see fewer rider/racers and mostly posers who polish a turd to sell at inflated prices with no real understanding about riding motorcycles and no real plan to ever seriously ride the thing let alone race it.

I'll add that as my tastes in bikes has changed (due to age, riding skill, comfort, riding conditions) I've come to greatly appreciate Superbike setups, which generally only allow 1/4 fairings. Though my Z1 will forever retain its clip-ons and Rickman fairing....
Anyone have a coffin tank KZ1000 they want to sell?
