A lot of the 350's raced by people here are run in a 'formula' class, so we have to run the stock carbs...
SUDCO makes a great carb tuning manual, you may want to check that out.
The thing to do is start with a huge jet and work your way down till it gets lean. Start with a 120 main and do some plug chops under load (any gear) at REDLINE (9500-10000rpm) move down from there, 6000rpm is right around the point where the fuel control is being shifted from the needle to the main jet.
