I have some articles on how to calculate chamber cone size if you want to read them. aside from the headpipe making a set of chambers is pretty straight forward and an accomplished welder such as yourself should have no problem fabbing up a set.
Keep this in mind, on a stock two stroke the only real advantage to a set of chambers is the weight savings, only when you get into porting the cylinders would you see significant gains and really take advantage of a set of custom chambers. there are small effects that custom chambers can have (like making a powerband more pronounced like in the case of a t500, or moving it up 500 rpm like a set of kawi triple dencos) but as a baseline stock cone and chamber length should work you fine.
