Dude, screw disney. Rent some snorkling gear, head to the east coast. Anywhere. The fish are incredible, and manatees are everywhere this time of year. Pick up a diver's bouy to tow behind you (tie the rope to your ankle or something) and head out along the jetties. The water temp will be great, and no one else will be in the water this time of year because they're floridified sissies.
