I looking to build a cafe racer. I used to have a Honda CB350F, boy what a dog. I looking for a Honda, but want feedback on which model is easiest and cost effective to build: 500/550/750. I want to keep the bike purchase before build to $1000-1500 and rebuild (add ons, re-paint, etc.) to another $750-1000. Total budget at $2500.
