Good score mate. Looks like a 75 model, the last of the T500 (before she became the GT500 and gave up her brit forks and drum brake for a disc). The seat looks like a dunstall seat design but I was unaware he made any parts for the T500.
If you are looking to cafe racer it, a little trick a racer told me about is that a CR750 long tank fits right on with little mods for the rear fastner.
