newbie

i have just recently decided to start planning a cafe racer build. i have average-above average mechanical skills and plan to take my time and learn as i go and hopefully do it right. i have started looking into what to choose as a project bike. i am a big honda fan and first considered a honda cb350,cb750 or anything in between. i have not been able to find much literature on building a cafe racer, so i am hoping to get some help from this forum. my first question is what would be the best bike to build in the honda family? Factors i would like to consider are: power to weight ratio, performance upgrades for the engine, interchangeable parts with similar models, parts availability, and of course, style. any help would be appreciated!
