Here's my Sachs 800 cafe racer - Nothing too drastic: Ace bars, clipped tail, seat hump, Hagon shocks, Kawasaki clutch & brake master cylinders, short mirrors & bespoke polished stainless 'silencers'. Also blanked off crazy PAIRS system.
